I love pasta, especially if it is a salad. Being a vegetarian, I always look for different recipes for making various types of salads. I also try mixing assorted ingredients with pasta to prepare a unique salad. Thus, I came up with 3 unique pasta salad recipes, which are healthy, super tasty, and you can make each of them within 20 minutes. And as they are prepared with only veggies and fruits, they are ideal for vegetarian. Non-vegetarian will love the recipes too.

Pasta Salad With Strawberry And Balsamic Vinegar

Preparation time – 20 minutes

Serves – 8 people

Ingredients

  • Farfalle – 1 pound
  • Feta cheese – ½ cup
  • Baby spinach – ½ cup
  • Balsamic vinegar – ¼ cup
  • Kosher salt and ground black pepper – to taste
  • Strawberries – 2 cups, quartered

For Garnishing

  • Toasted almond slivers – ¼ cup

Directions

  • Take a pot half full with salted water. Add the Farfalle in it and let it boil for a few minutes till they are tender. Drain the water and add to a serving plate.
  • Add feta cheese, strawberries, spinach along with salt and pepper to the pasta and mix well.
  • Pour the balsamic vinegar in a saucepan and let it boil till it becomes thick.
  • Tip the thickened vinegar over the pasta and top it with almond slivers.

Macaroni Salad With Pimento Pepper And Olives

Preparation time – 15 minutes

Serves – 6 people

Ingredients

  • Macaroni – 1 pound
  • Cheddar cheese – 2 cups
  • Olives – ¼ cup, chopped
  • Pimento peppers – 3 jars
  • Mayonnaise – ¾ cup
  • Kosher salt – to taste
  • Cayenne pepper – 1 tsp

For Garnishing

  • Chives

Directions

  • Take a pot. Add water and salt and put it o high flame. As soon as the water starts to boil, add the macaroni and let it boil till it becomes soft. Now remove the excess water and keep it in a bowl.
  • In the pasta bowl, mix the olives, cheese and mayonnaise, cayenne pepper along with pimento peppers. Stir them with a spoon so that everything mixes well. Sprinkle some salt and check the seasoning.
  • Once it is done, garnish with chives.

Classic Greek Salad With Farfalle, Tomatoes, Kalamata Olives And Wine Vinegar

Preparation time – 20 minutes

Serves – 8 people

Ingredients

  • Farfalle – 1 pound
  • Extra virgin olive oil – ¼ cup
  • Kosher salt – to taste
  • Garlic and oregano powder – ½ tsp each
  • Kalamata olives – 1/3 cup, chopped
  • Cucumber –  1, chopped
  • Red onion – ½
  • Cherry tomatoes – 1 cup, cut into halves
  • Wine vinegar – 3 tbsp
  • Feta cheese – ½ cup
  • Black pepper – to taste
  • Dill – 2 tbsp

Directions

  • Cook the Farfalle till soft according to the instructions given on the packet. Keep it aside after removing the water.
  • Take a bowl and mix the olive oil, wine vinegar, garlic, and oregano.
  • Add the cucumber, olives, red onion, Farfalle, tomatoes, and dill in this oil-vinegar concoction. Mix well with the dressing. Sprinkle some salt and black pepper. Check the seasoning.
  • Now add the feta cheese on top and serve.
