Ingredients

  • Three cheese tortellini – 1 packet
  • Grilled chicken – 1 cup, chopped
  • Grape tomatoes – 2 cups
  • Spinach leaves – 3 cups
  • Extra virgin olive oil – 1 tbsp
  • Kosher salt – ½ tsp
  • Avocado – ½
  • Basil – 2 tbsp, fresh and chopped
  • Parmesan cheese – 5 ounce, shredded

Directions

  • First of all, cook the pasta seeing the instructions on the label of the packet. When done, drain the water but keep about a ¼ cup for use.
  • Take a skillet and pour the oil and put it on a medium flame. When the oil is hot, add tomatoes and sprinkle salt. When the tomatoes are soft, add the avocados and stir for a few minutes.
  • Now add the spinach leaves, shredded chicken, and cooked pasta along with chopped basil. Mix everything well. If needed, add some of the water. Cook for a few minutes.
  • Remove from the heat and add the Parmesan cheese. Serve hot. This prepared pasta will serve eight people.

Spicy Tortellini

Ingredients

  • Tortellini- 1 packet
  • Olive oil – 2 tbsp
  • Garlic – 2 cloves
  • Marinara sauce – ½ cup
  • Coriander powder – 1 Tsp
  • Turmeric – ½ tsp
  • Garam masala powder – 1 Tsp
  • Cilantro – a handful, fresh and chopped

Directions

  • Cook the pasta as per the instructions on the packet label. Drain the water and keep it.
  • Take a sauce pan and keep it on medium flame. Pour the oil and wait for some time till the oil is hot.
  • Now add the garlic along with turmeric, coriander and garam masala powder. Stir for a few minutes. Now mix the marinara sauce and stir again. Tip in the pasta. Mix everything well so that the pasta gets coated with the spices. After cooking for a few minutes, sprinkle the cilantro and switch off the flame.
  • You can happily serve six people with this pasta dish.
